Peel and grate the celery, then place in a bowl.
Add the spices and Parmesan, if using, and mix well.§
Heat a frying pan with a good drizzle of olive oil. Pour in the celery, distribute well and mash with the back of a tablespoon. Cook over medium heat for 5-7 minutes.
To flip the Rösti patty, use a plate. Cook the other side for about 5 minutes, adding an extra drizzle of olive oil.
Carefully transfer the rösti to a plate and garnish with fresh chives.
Enjoy with a quality protein (pairs well with salmon / poached egg / tempeh) and EVEN more vegetables.
