In a small bowl, combine the chia seeds and water. Allow to thicken for about 10 minutes.
Meanwhile, place coconut sugar, ground almonds, cinnamon and vanilla powder in a food processor or large bowl and mix well.
Add the chia mixture and maple syrup. Mix for about 30 seconds until you have a sticky dough. If the dough is crumbly add a little water.
Preheat oven to 160° C.
Roll out the dough between two sheets of baking paper to a thickness of about 5 mm.
Using a star-shaped biscuit cutter, cut out the biscuits and place them on the baking sheet covered with baking paper. If the dough sticks to the cookie cutter, dip it in a little water and continue.
Bake for 8-10 minutes until golden brown.
Let the biscuits cool for a few minutes on a cooling rack.
