Beat the egg whites with a pinch of salt in a bowl until stiff.
Add the sugar, cinnamon, lemon juice and ground almonds and mix well. Tip: If the mixture is too sticky, add some more ground almonds.
Sprinkle some sugar on your work surface, place the dough on it, cover it with a piece of cling film and roll it out about 7mm thick.
Cut out the stars with a cutter and place them on a baking tray covered with baking paper.
Then put the cinnamon stars in the oven for 3-5 minutes.
For the glaze, mix 2 tablespoons of icing sugar with some orange or grapefruit juice in two separate bowls. The icing sugar icing should be extremely thick!
Put the baked cinnamon stars on a cooling rack to cool.
With a small spoon you can now glaze your cinnamon stars.
