  1. First, wash the vegetables, cut them into small pieces and put them into a pot on the stove.
  2. Then, sprinkle it with about half of the sugar and half of the vanilla sugar. Start to boil it and then steam the rhubarb until it is soft and a purée.
  3. After, let the contents of the pot cool down. Meanwhile mix the quark with the milk, the other half of the sugar and vanilla sugar and last with the lemon juice.
  4. When this is done, put the cooled mousse with the quark into four small glass bowls. For the last step, refrigerate the quark for a few hours in the fridge. If you like, you can also decorate the dessert with a few nuts or pistachio chips before serving.
