In a frying pan, fry the shallot, the lardons and the pumpkin for a few minutes.
Add the white wine and cook for a few minutes.
Cook the pasta according to the time indicated on the packet and reserve 1dL of cooking water.
Add the reserved cooking water and the cream to the pan with bacon and pumpkin and cook for a few more minutes, then add the pasta and serve with grated cheese for extra flavour.
