Summer cookies with goji berries and pistachios
For the dough
For the topping
  1. For the dough, chop the goji berries, pistachios and chocolate and mix in a bowl with the flour and rolled oats.
  2. Mix butter, powdered sugar, egg, salt and lemon zest in another bowl with a mixer to form a dough.
  3. Now add the dry ingredients and mix with your hands.
  4. Form the dough into a roll (about 3 cm in diameter) and let chill for about 1 h wrapped in foil.
  5. Preheat the oven to 160 °C convection oven.
  6. Cut approx. 1 cm thick slices from the roll and bake them for approx. 10-12 minutes.
For the glaze
  1. Heat the chocolate and coat the cooled cookies. Immediately decorate with the pistachios and more goji berries.
