  1. Mix flour, salt and sugar together.
  2. Add the cold butter cubes and mix with your fingers until only very small crumbs are left.
  3. Add the yogurt and water and mix everything to form a dough. If the dough is too dry, add a bit more water as necessary
  4. Wrap the dough in cling film and put it in the fridge for at least 30 minutes.
  5. Preheat the oven to 200˚C.
  6. Roll the dough out on a floured work surface with a rolling pin.
  7. Place the rolled out dough on a suitable baking tray and prick it with a fork.
  8. Blend walnuts, sugar, rice flour, salt, melted butter and eggs in a blender until even in consistency.
  9. Spread the walnut mixture on the bottom.
  10. Peel the apples, halve them and cut them into slices of about 2-3mm thick.
  11. Sprinkle them with lemon juice.
  12. Cover the dough with the apple slices in a squared pattern, as seen in the photos above
  13. Pour a little honey over them, folding in the protruding edges of the dough and brushing them with an egg wash (optional).
  14. Bake the galette for 20 minutes.
