For the hash browns

sweet potatoes

flour

salt, pepper, nutmeg
For the fried eggs

eggs
For the dip
Crème fraîche

spring onion

Instructions
Wash, peel and grate the sweet potatoes.
Fold in the egg, flour and spices.
Make small pancakes from the batter. Add butter or oil to a frying pan and fry the pancakes on both sides until golden brown.
Add the two additional eggs to a frying pan to make the fried eggs.
For the dip
Press out the juice of the lime.
Wash the spring onion. Cut into small pieces.
Mix spring onions, lime and crème fraîche together. Season as you like.
