Ingredients

coloured carrots
1
bundle
Oregano
coarse salt
Ticino pepper
olive oil with lemon
apricot vinegar
1-2
burrata cheese
Instructions
Preheat oven to 200°C.
Cut the carrots in 2 or 4 lengthwise and put them in a dish and season them with salt, pepper and oregano.
Add the olive oil and 4 tablespoons of apricot vinegar and mix well.
Place in the oven for 35 minutes.
Once the carrots are tender, remove from the oven, add the burrata on top of the carrots and enjoy.
Recipe Notes
Option: make a pesto with the carrot tops. This will add freshness to the dish!
