Add the quinoa and a pinch of salt to 400 ml cold water and bring to the boil. Then leave to soak for about 15 minutes.
Chop the onion. Slice the mushrooms and cut the broccoli into florets. Fry in a little oil.
Fry the chicken (or plant-based alternative) with a little oil.
Put the quinoa, vegetables and chicken (or plant-based alternative) in a large bowl. Season with salt and pepper, add the tandoori dressing and mix well.
