  1. In a bowl, using a plastic spatula, mix the flour and water together. Add the water progressively, until the dough becomes firm. If needed, add some more flour.
  2. Add the sesame seeds and mix it all together.
  3. Leave the dough to rest for 5 minutes.
  4. Preheat the oven at 180 °C.
  5. Cut the dough into 8-9 pieces and place them on baking paper. Cover the pieces with another baking paper and flatten them with a glass.
  6. Carefully remove the top sheet and place the baking sheet with the dough in the microwave. Heat for 5 minutes. The dough should rise.
  7. Remove the crackers from the microwave. Brush with soy sauce on both sides and place the crackers on a baking tray covered with baking paper.
  8. Bake in the oven at 180 °C for 12 minutes. Flip them halfway through the cooking time.
  9. Remove from the oven and allow to cool on a rack. The crackers will become crunchy as they cool down.

This very crispy recipe can be adapted according to everyone’s taste – with seaweed, for example. And the children can also participate in the preparation of the recipe.

Like all rice-based preparations, this cracker has a high glycemic index. This means that it tends to work up your appetite. It should therefore be consumed in moderation. As a nutritionist, I appreciate the addition of sesame because it slows down the absorption of sugar in the blood and thus avoids glycemic peaks.
