Recipe Notes
  1. Start by marinating the turkey breasts in the marinade. Mix together all the ingredients listed under ‘marinade’ and transfer the mixture to a food-safe bag, together with the turkey breasts. Give it a good shake, until the turkey meat is well coated with the marinade. Keep the bag in the refrigerator and prepare the rest of the ingredients.
  2. After marinating for at least 30 minutes (best overnight), heat up a grill (you can use a stove-top grill or any grill of your choice). grill the turkey breast pieces for 7 minutes on each side until cooked. Once cooked, let the meat rest for at least 5 minutes.
  3. Cut the grilled turkey meat into small pieces and keep aside.
  4. To make the dressing, add the bell peppers, feta cheese and olive oil in a blender and blend together until just combined. Keep aside.
  5. To assemble the wraps, start by warming the tortillas individually on a stove top. Transfer the warmed tortilla on a plate and add the grilled turkey meat pieces. In a bowl, add the chopped avocado, corn kernels, parsley and lemon juice. Mix together. Spread some of this avocado-corn mixture over the turkey pieces. Finally, spoon over some of the feta pepper dip.
  6. Your wrap is ready! You can slice the wrap in the middle and make two portions of each wrap to serve.
