  1. Mix the eggs with the milk, sugar and melted butter.
  2. Add the flour, yeast (diluted in a little water) and salt.
  3. Add the cinnamon and matcha powder.
  4. Knead the dough for about 10 minutes.
  5. Let the dough rest for 12 hours at room temperature.
  6. Once the dough has risen well, roll it out on a flat surface with a rolling pin.
  7. Melt the butter for the filling and brush the entire surface of the dough with a brush.
  8. Mix the sugar and cinnamon together and sprinkle the mixture over the entire surface of the dough.
  9. Roll the dough into a sausage.
  10. Cut the dough into 10 rolls.
  11. Place the rolls in a large baking dish.
  12. Bake for 20-25 minutes at 220° C.
Icing
  1. Mix the water with the icing sugar.
  2. Spread the mixture over the snails (ideally once they have cooled).
  3. Sprinkle with matcha powder using a small sieve.
