  1. Preheat the oven to 100°C (fan oven).
  2. Cut the pears lengthwise into thin strips.
  3. Remove the seeds with a sharp knife.
  4. Place the pear slices on a baking tray lined with baking paper.
  5. Brush the pear slices with a thin layer of maple syrup.
  6. Bake in the oven for 1.5 hours, turning the pear slices halfway through the cooking time.
  7. Mix the quark with the fromage frais, chives, salt and pepper to taste.
  8. Once the pear chips have cooled, place a small spoonful of the fromage frais mixture on top.
