Instructions
Preheat the oven to 180°C.
Mix together the flour, sugar and salt.
Add the eggs, oil, water and milk.
Mix well.
Add the baking powder and baking soda.
Beat the mixture with a whisk to obtain a smooth and homogeneous dough.
Add the chia seeds and frozen blueberries.
Mix all together.
Fill one third of the muffin tin with the mixture and set the rest of the mixture aside.
Put one teaspoon of lemon curd in each mould.
Finish filling each muffin mould with the rest of the mixture without overfilling them beyond three quarters of the mould.
Bake for about 23-25 minutes in the middle of the oven.
