For the dough: dissolve the yeast in lukewarm water. Mix the other ingredients for the dough in a bowl. Then add the water and the dissolved yeast and knead until you obtain a smooth dough (about 5-7 minutes). Cover and let rise for about 60 minutes.
For the stuffing: mix the basil and oil in a blender.
Roll out the dough to form a rectangle on a floured surface. Then brush with the basil mixture.
Now cut the dough into 12 parts of equal thickness (e.g. with a pizza roll), sprinkle with pieces of chopped mozzarella. Season with salt and pepper.
Roll up the strips and place them in muffin moulds. Let rise for an additional 30 minutes.
Now preheat the oven to 200 °C and bake the muffins for about 30 minutes.
