beer
(or sparkling water)
salt
pepper
Espelette pepper
olive oil
sunflower oil
Greek yoghurt
zest of one lemon
zest of one lime
fresh mint
Instructions
Mix the two types of flour and the spices in a bowl.
Add the egg and beer and whisk until you have a smooth, relatively thick mixture.
Dip the washed courgette flowers into the batter and fry in a pan with sunflower oil.
While the flowers are cooking, prepare the yoghurt sauce: mix the yoghurt with the lemon zest and chopped mint leaves, a little salt and pepper.
Arrange the sauce and place the flowers on top.
