Instructions
For the salad
  1. Thinly slice the nectarine.
  2. Slice the green tomatoes.
  3. Cut the mozzarella cheese into thin slices.
  4. Chop the basil leaves.
  5. Divide the rucola between 2 plates and decorate with the slices of nectarines, green tomatoes and mozzarella cheese.
  6. Sprinkle the basil on top.
For the dressing
  1. In a bowl, mix the balsamic vinegar, olive oil, coarse-grained mustard, honey, and pepper. Your sauce is ready!
  2. Add the dressing to the two salad plates.
For the avocado and pesto toast
  1. Mix the avocado with the basil leaves, lime juice,pine nuts and salt.
  2. Toast 4-6 pieces of bread and add the avocado pesto on top of it.
  3. Enjoy the toast with the salad.
