We love the smell of freshly baked cookies in the house and therefore always look forward to the winter season. Cinnamon stars are one of the classics among Christmas biscuits and that’s why we have a recipe with a little extra pop: an orange and grapefruit glaze! This gives the cinnamon stars a slightly fruity taste, which complements the cinnamon note.
Ingredients
- 1 egg white
- 1 pinch salt
- 125 g granulated sugar
- 3/4 tbsp cinnamon
- 1/2 tbsp Lemon Juice
- 175 g ground almonds
- 4 tbsp powdered sugar
- 1 Orange
- 1 Grapefruit

Instructions
- Preheat the oven to 250˚C.
- Beat the egg whites with a pinch of salt in a bowl until stiff.
- Add the sugar, cinnamon, lemon juice and ground almonds and mix well. Tip: If the mixture is too sticky, add some more ground almonds.
- Sprinkle some sugar on your work surface, place the dough on it, cover it with a piece of cling film and roll it out about 7mm thick.
- Cut out the stars with a cutter and place them on a baking tray covered with baking paper.
- Then put the cinnamon stars in the oven for 3-5 minutes.
- For the glaze, mix 2 tablespoons of icing sugar with some orange or grapefruit juice in two separate bowls. The icing sugar icing should be extremely thick!
- Put the baked cinnamon stars on a cooling rack to cool.
- With a small spoon you can now glaze your cinnamon stars.
Recipe Notes
If you prefer, lemon or blood orange can also be an alternative.
