Recipe for a healthy, gluten-free energy cake. You can take this “sporty” cake with you wherever you go; whether it’s for a bike ride, a walk, breakfast, dessert or a picnic. This cake is easy to digest.

  1. Preheat the oven to 180 °C with the fan heat.
  2. Add the eggs to a bowl, mix well and then add the mashed bananas, the milk and the sunflower oil.
  3. Cut the apple and dates (or add the date paste) into pieces. Add them to the mixture and stir well.
  4. Add the flour and baking powder and mix well.
  5. If you want you can use different flours and mix them. And you can add dried fruits, almonds, hazelnuts or chocolate (dark) as well.
  6. Put in the oven for at least 25 minutes and then check the consistency of the cake. Take it out when the inside is still a little damp, but no longer sticks to the baking tray.
