Instructions
  1. Flatten the puff pastry and cut out strips of about 1-2cm.
  2. Oil the moulds and roll the strips to create the shape of the carrot. Use pastry cones or sleeves or a carrot to make the cone shape. The carrots will be soft after baking: purée them to make a velouté or hummus and don't waste them 😉 If you don't have any of this at hand, you can make cones by shaping tinfoil to have moulds.
  3. Mix the egg yolk, milk and colouring, brush the carrots with the mixture.
  4. Bake in a preheated oven at 200 °C for 10 to 20 minute depending on the size of the carrots.
  5. Allow to cool before removing the moulds.
  6. Stuff and decorate with parsley stems.
