It is finally asparagus time again – and that also means: asparagus soup again at last! We have a super tasty recipe for you. Enjoy!
Instructions
- Soak the cashew nuts in water (preferably 30-60 minutes).
- Wash the asparagus and cut off the lower ends.
- Peel the garlic and onion and cut into small pieces.
- Put the asparagus, garlic and onion in a pot and fill it with 2 cups of water, put a lid on it and bring to a boil.
- Simmer for 5-7 minutes until the asparagus are soft.
- Add the oil, nuts and spices and puree in a blender or with a hand blender directly in the pot.
- Add water as required.
- Enjoy!
