For a ‘healthier’ version of your guilty pleasure, we have written the following recipes. This way the beach body stays trim despite indulging in a few sweet treats!
Ingredients
Base
- 400 ml coconut milk cooled and not punctured
- 200 ml water
- 1 lemon juice and zest
- 200 g Cashews soaked in cold water
- 4 Medjool dates pitted
- 1 vanilla pod
Peanut ice-cream
- 200 ml base mixture
- 2 tbsp crunchy peanut butter
- 2 tbsp maple syrup
Apricot-pistachio
- 200 ml base mixture
- 200 g apricots pureed
- 50 g pistachios shelled

Instructions
- First prepare the ice base. To do this, leave the coconut milk to solidify in the refrigerator, the milk must be absolutely firm.
- Soak the cashews in cold water for a few hours until they are soft. Put all ingredients in your food processor or blender.
- If you have an ice cream machine, put all the ingredients (peanut or apricot variations) in the machine and freeze the mixture.
- If you don’t have an ice cream machine, pour everything into a container and place it in the freezer for a few hours. (If you prefer, feel free to use seasonal fruits instead of apricots).
