Courgette is very multi-purpose. It can be used in sweet cakes, made into spaghetti, ratatouille or stuffed. For today, how about some courgette roses? Here’s a delicious recipe that you can serve as an aperitif or as a snack. Enjoy!
Ingredients
- 1-2 courgettes (Depending on the size)
- 1 packet puff pastry
- ~70 g fresh cheese
- ~100 g grated cheese
- 2 tbsp seasoning (garlic, pepper, basil, paprika, etc)
- salt

Instructions
- Preheat oven to 160°C (convection oven).
- Cut the courgettes into thin slices and sprinkle with salt on both sides to soften them. Soak them for about 5 minutes, then dry them with a cloth.
- Roll out the puff pastry and cut into 8 long strips.
- Add cream cheese, spices and grated cheese.
- Then place the courgette strips lengthways on the first strip, so that they stick out a little on one side. Roll them up and place them in a muffin tin.
- Repeat with the remaining strips.
- Bake the roses in the oven for about 20-30 minutes, let cool briefly. Enjoy!
