Truffle Fries

Truffles are not only a rarity, but also real powerballs! They contain vitamin C, B vitamins, potassium, calcium, magnesium and iron. They are also a good source of omega 3 fatty acids – not to mention that they are extremely delicious!

Instructions
  1. Cut the potatoes into thin chips and place them in a bowl of cold water for at least 1 hour. Change the water several times during this time until it remains as clear as possible.
  2. Preheat the oven to 230 degrees (top and bottom heat). Drain the fries and dry well. Return to the (dry) bowl. Add the olive oil and truffle oil and mix well.
  3. Sieve the cornflour over the top, add the Parmesan and mix well again.
  4. Place the chips on two baking trays. Next to each other, not on top of each other, otherwise they won't get crispy!
  5. Bake in the preheated oven for approx. 20 - 25 minutes until crispy. Sprinkle with salt and slice the fresh truffle over the fries.
  6. Our recommendation: enjoy immediately – preferably with a glass of champagne!
