Instructions
  1. Preheat the oven to 170°C top- bottom heat and grease and oil an approx. 30 cm loaf pan.
  2. Wash the zucchini, cut lengthwise and remove the core with a spoon. Grate finely with a grater, as well as the lemon zest.
  3. Beat the eggs, sugar, vanilla sugar and margarine with a mixer until fine and fluffy.
  4. Add the flour, baking powder and a pinch of salt and mix well.
  5. Now add the grated zucchini, lemon zest and olive oil and mix until smooth.
  6. Pour the batter into the cake pan and bake for about 60 minutes until golden brown.
  7. Once baked, allow to cool completely.
  8. For the glaze, add the lemon juice to the powdered sugar and stir. Pour over the cake and then garnish with chopped pistachios.
