Recipe for a healthy, gluten-free energy cake. You can take this “sporty” cake with you wherever you go; whether it’s for a bike ride, a walk, breakfast, dessert or a picnic. This cake is easy to digest.
Ingredients
- 3 bananas mashed
- 100 ml sunflower oil
- 100 ml milk of your choice (the recipe uses soy)
- 4 eggs
- 250 g flour
- 50 g chestnut flour
- 1 apple cut in half
- date paste or fresh dates cut into pieces
- yeast or baking powder

- Preheat the oven to 180 °C with the fan heat.
- Add the eggs to a bowl, mix well and then add the mashed bananas, the milk and the sunflower oil.
- Cut the apple and dates (or add the date paste) into pieces. Add them to the mixture and stir well.
- Add the flour and baking powder and mix well.
- If you want you can use different flours and mix them. And you can add dried fruits, almonds, hazelnuts or chocolate (dark) as well.
- Put in the oven for at least 25 minutes and then check the consistency of the cake. Take it out when the inside is still a little damp, but no longer sticks to the baking tray.
