Rhubarb – the sour stick with a distinctive aroma – is booming at the end of spring and beginning of summer in all vegetable compartments of supermarkets and in many gardens. Over and over again people argue about whether the sour stick is a fruit or a vegetable, but the answer to this is clear: Rhubarb is a vegetable.
The vegetable can be used in many ways in the kitchen. For example, it’s very popular in jams or in a compote. Following we will introduce you to a recipe for a delicious rhubarb quark. It’s super delicious and nicely you don’t need more than 15 minutes to prepare this quark. First, wash the vegetables, cut them into small pieces and put them into a pot on the stove.
Then, sprinkle it with about half of the sugar and half of the vanilla sugar. Start to boil it and then steam the rhubarb until it is soft and a purée.
After, let the contents of the pot cool down. Meanwhile mix the quark with the milk, the other half of the sugar and vanilla sugar and last with the lemon juice.
When this is done, put the cooled mousse with the quark into four small glass bowls. For the last step, refrigerate the quark for a few hours in the fridge. If you like, you can also decorate the dessert with a few nuts or pistachio chips before serving.
