We are kicking off the new year with a healthy quinoa salad!
Over the holidays we had a lot to eat, from Beef Wellington to chocolate mousse. This Detox Salad is appealing thanks to its flavour, lightness and the many fresh and healthy ingredients!
The Ancient Grain in Quinoa Salad
Kale is currently in season as a winter vegetable and in addition, this variety of cabbage provides a number of nutrients (including a lot of calcium), which is why it’s considered a “superfood”. Quinoa is an ancient grain from South America and is known for its high protein content (compared to other grains). Pomegranate seeds and pumpkin seeds give the salad a special twist with some crunch.
All ingredients in this Detox Salad are fresh and, thanks to their nutrients, super healthy!
Ingredients
- 150 g kale (approx. 3-4 large stems)
- 1 pomegranate
- 1 handful pumpkin seeds (approx. 20-30g)
- 100 g cooked quinoa
- 3-4 tbsp Lemon Juice (approx. 1/2 lemon)
- 1-2 tbsp olive oil
- 1 pinch salt

Instructions
- Cook the quinoa according to the package instructions. (Rinse quinoa with cold water, add double the amount of water to the pan, cook for 10min on medium heat, remove from heat and cover for 5min).
- Wash the kale, put it in a bowl and add approx. 1 tbsp of olive oil and a little bit of salt.
- Massage it with your hands until kale is shiny and soft to the touch.
- Remove the seeds from the pomegranate and set aside in a small bowl.
- Place the quinoa, kale, pomegranate seeds and pumpkin seeds in a large bowl and mix well.
- Add 3-4 tbsp. lemon juice (to taste).
- Season with salt if necessary.
