Instructions
  1. Pour double the amount of boiling water over the couscous and leave to infuse.
  2. Wash and chop the parsley and mint well.
  3. Wash the red chilli and remove the seeds. Then cut into fine rings.
  4. Wash and chop the rest of the vegetables.
  5. Mix everything together.
  6. Then mix in the lemon juice and oil and season with salt, pepper and other spices of your choice.
