Broccoli patties

This recipe for broccoli and parmesan patties is delicious. These little patties can be used as an alternative to meat in a hamburger or as a side dish to a good summer salad.

Instructions
  1. Preheat oven to 180° C.
  2. Wash and cut the broccoli into florets.
  3. Place the florets in a blender and blend to obtain a semolina-like consistency. Blend in short bursts to prevent the broccoli from giving off too much water.
  4. Pour the broccoli florets into a bowl. Add the parmesan, paprika and beaten eggs.
  5. Mix gently with a wooden spatula and then use your hands to form small pebbles.
  6. Place in the oven for 12 to 15 minutes.
  7. Enjoy hot or cold! PS: Store in an airtight jar in the refrigerator for 2-3 days.
