If you need a fun brunch or snack idea for Easter, this is the perfect one! Delicious puff pastry carrots stuffed with the filling of your choice. Enjoy!
Ingredients
- 200 g puff pastry
- 1 egg yolk
- 2 tbsp milk
- 1 tbsp sunflower oil
- drops orange colouring
- parsley stems

Instructions
- Flatten the puff pastry and cut out strips of about 1-2cm.
- Oil the moulds and roll the strips to create the shape of the carrot. Use pastry cones or sleeves or a carrot to make the cone shape. The carrots will be soft after baking: purée them to make a velouté or hummus and don't waste them 😉 If you don't have any of this at hand, you can make cones by shaping tinfoil to have moulds.
- Mix the egg yolk, milk and colouring, brush the carrots with the mixture.
- Bake in a preheated oven at 200 °C for 10 to 20 minute depending on the size of the carrots.
- Allow to cool before removing the moulds.
- Stuff and decorate with parsley stems.
