Healthy and a nice splash of colour on the buffet, these summer cookies are great to bring to a summer party.
Ingredients
For the dough
- 45 g dried goji berries
- 25 g pistachios
- 220 g flour
- 45 g oat flakes
- 100 g soft butter or vegan alternative
- 50 g powdered sugar
- 1 egg or vegan alternative
- 1 pinch of salt
- 50 g white chocolate or vegan alternative
- 1 organic lemon zest
For the topping
- 25 g pistachios
- 20 g goji berries
- 50 g white chocolate or vegan alternative

Instructions
- For the dough, chop the goji berries, pistachios and chocolate and mix in a bowl with the flour and rolled oats.
- Mix butter, powdered sugar, egg, salt and lemon zest in another bowl with a mixer to form a dough.
- Now add the dry ingredients and mix with your hands.
- Form the dough into a roll (about 3 cm in diameter) and let chill for about 1 h wrapped in foil.
- Preheat the oven to 160 °C convection oven.
- Cut approx. 1 cm thick slices from the roll and bake them for approx. 10-12 minutes.
For the glaze
- Heat the chocolate and coat the cooled cookies. Immediately decorate with the pistachios and more goji berries.
