This recipe is well balanced with both macro and micronutrients. It also contains vitamins, minerals, fiber and fatty acids of very good quality. You can eat it with a salad of seasonal raw vegetables.

Beetroot hummus
- 250 g plain hummus
- 1/2 beetroot
Tsatsiki
Avocado purée
- 1 Avocado

- 1 handful beetroot sprouts
- 1 tomato
- a few leaves of green leafy salad

Beetroot hummus
- Peel and wash half a beetroot and mix it with the natural hummus.
Tsatsiki
- Peel and grate the cucumber then allow to drain for 15-20 minutes. Chop 5-6 mint leaves and crush the garlic clove. Finally, mix the yogurt with the grated cucumber, garlic and mint. Season with salt and pepper and set aside in a cool place.
Avocado purée
- Peel and crush the avocado, add salt and then set aside.
Crudités
- Wash and slice the tomato, rinse the lettuce leaves and beet sprouts in cold water.
Burgers patties
- Grill the burgers patties using rapeseed oil (cook to convenience). Season with salt and pepper and keep warm.
Buns
- Toast the 8 buns halves for about 1 min. on each side in the oven at 150°C.
Assembling the burger
- Assemble the burgers by spreading the first half of the bun with the avocado purée and then with the beetroot hummus. Place a few salad leaves, the patties and the beet sprouts on top. Spread the second half of the bun with the tsatsiki and close the burgers.
