Instructions
  1. Wash artichokes well, remove stem and cut off the top third of the leaves.
  2. Prepare pot with enough water and add 4 tablespoons lemon juice and 1 tablespoon salt to the water. Add artichokes to water, bring to a boil and simmer covered over medium heat for about 30 minutes.
  3. For the herb dip: finely chop basil leaves and parsley. Grate and squeeze the lime. Add the lime zest and herbs to the crème fraiche and season with salt and pepper and lime juice.
  4. For the mustard-honey dip: pluck the dill tips and chop finely. Finely slice and dice the onion. Mix together the mustard, dill, onion, orange zest, honey and lime juice and season with pepper.
  5. Lift artichokes out of water with a ladle and drain well.
  6. Serve with bread
