This is an Asian inspired cool and crisp salad with added health benefits of ginger, lemon and orange. Theses flavours compliment the coolness of a cucumber and make a mouth watering salad. It comes together really quick and is a crowd pleaser.
Ingredients
- 1 cucumber
- 1 cm ginger fresh
- 1 /2 orange juice
- 2 tbsp Lemon Juice
- 2 tbsp olive oil
- 1 tsp sesame oil
- 1 tsp honey
- 2 tsp black sesame seeds roasted
- salt
- pepper

- Wash the 1st cucumber and peel into long strips.
- For the salad dressing grate approx. 1 cm of fresh ginger and mix with lemon juice, orange juice, olive oil, sesame oil, honey, salt and pepper.
- Mix the salad with the dressing and garnish with the roasted sesame seeds.
Recipe Notes
Salt the cucumber before making the salad and squeeze the juices out. Do this, so that the dressing doesn’t get watered down by the cucumber juice once you make the salad. I like to let the salad marinade so that the cucumber absorbs all the flavours.
