This muffin recipe is a delicious treat with a sweet mix of tasty and healthy ingredients.
Ingredients
- 300 g flour
- 2 eggs
- 60 g raw cane sugar
- 100 ml sunflower oil
- 100 ml milk
- 100 ml water
- 1 pinch salt
- 1 packet baking powder
- 1 packet baking soda
- 100 g lemon curd
- 3 tbsp chia seeds
- 100 g frozen blueberries

Instructions
- Preheat the oven to 180°C.
- Mix together the flour, sugar and salt.
- Add the eggs, oil, water and milk.
- Mix well.
- Add the baking powder and baking soda.
- Beat the mixture with a whisk to obtain a smooth and homogeneous dough.
- Add the chia seeds and frozen blueberries.
- Mix all together.
- Fill one third of the muffin tin with the mixture and set the rest of the mixture aside.
- Put one teaspoon of lemon curd in each mould.
- Finish filling each muffin mould with the rest of the mixture without overfilling them beyond three quarters of the mould.
- Bake for about 23-25 minutes in the middle of the oven.
