Until the 17th century the pea was used as a dried vegetable. They were usually eaten as puree – but today we make a delicious pesto out of them!
Ingredients
- 300 g green peas
- 1 clove garlic
- 2 tbsp pine nuts
- 1/2 lemon juice
- 50 g pecorino cheese grated (can be replaced by a plant-based alternative)
- 50-80 ml olive oil
- 300-400 g Spaghetti or your favourite pasta
- salt
- pepper
- chilli optional

Instructions
- Cook the pasta according to the instructions on the package.
- Steam the peas for 7 minutes and then puree them with the rest of the ingredients to obtain a smooth mixture and season to taste.
- Sprinkle with pine nuts and fresh pecorino.
- Enjoy!
