  1. Cook the chickpeas in a pot of water for about 45 minutes (until tender). If you are using a steamer, the cooking time is 15 minutes.
  2. Once the chickpeas are cooked, rinse them in cold water and place them in a mixing bowl with the other ingredients.
  3. Add the herbs as you go along to suit your taste.
  4. Blend until smooth. If necessary, add olive oil to loosen the mixture.
  5. Add the Espelette pepper last.
  6. Place the hummus in a bowl, sprinkle with a few fresh herb leaves and a drizzle of olive oil.
  7. Serve with fresh pita bread or other bread. Enjoy!
