As the holidays approach, there’s nothing better than impressing your guests with a simple yet gourmet dessert which highlights the bold combination of dark chocolate and mandarin orange… 3,2,1, here we go!
- 4 tangerines
- 1 vanilla pod
- 3 tbsp brown sugar or more, based on your liking
- 100 g dark chocolate
- 100 g Butter
- 60 g flour
- 100 g sugar
- 3 eggs
- zest of two tangerines
- Place the tangerine slices in a saucepan with the sugar and vanilla and simmer for about 20-30 minutes over medium heat.
- Remove from the heat and set aside in a cool place or in moulds (mini half-spheres) in the freezer (your choice).
- In a bowl, whisk the eggs and sugar until the mixture whitens and add the tagerine zest.
- In another container, melt the chocolate and butter in a double boiler.
- Once the chocolate and butter have melted, pour over the eggs, sugar and zest and whisk again.
- Add the flour and whisk until the mixture is smooth.
- Butter and flour the moulds and then fill up to half with the batter.
- Add the the tangerine heart and cover with the other half of the chocolate mixture.
- Bake it for 6-8 minutes in a preheated oven at 200°C.
- Wait a few minutes before unmoulding and serve warm or cold.
If you want, sprinkle with some icing sugar before serving. You can also add a scoop of vanilla ice cream, which is always a nice addition to any dessert.
