This salad is a complete protein and energy meal. It is high in fibre, essential fatty acids, vitamins and minerals. It is easy to prepare and can also be served with grilled meats.
Ingredients
- 500 g green beans
- 250 g canned chickpeas
- 250 g Edamame
- 1 red onion
- 4 apricots
- 250 g cherry tomatoes
- salt and pepper
Sauce
- 1/2 lemon (pressed juice)
- 2 tbsp honey
- 4 tbsp olive oil
- 1 tsp mustard

Instructions
- Prepare the green beans and cook them for 12 minutes in boiling water with 1 teaspoon of salt or 1 stock cube. Once cooked, blanch them and leave to cool.
- Rinse the chickpeas
- Remove the beans from the edamame
- Cut a red onion and the apricots into thin strips and the cherry tomatoes in half
- Mix all the ingredients together and season with salt and pepper to taste
Sauce
- Squeeze the juice of half a lemon
- Mix the juice with the olive oil, honey and mustard
- Add to the salad and mix well
