Basil stimulates the appetite, promotes fat digestion and helps to relieve stomach aches. But you can do more than just spice up your pasta with it – today we are making delicious basil muffins!
Ingredients
For the dough
- 500 g flour
- 10 g sel
- 5 g sugar
- 30 g fresh yeast
- 40 ml boiled potatoes
- 250 ml lukewarm water

- For the dough: dissolve the yeast in lukewarm water. Mix the other ingredients for the dough in a bowl. Then add the water and the dissolved yeast and knead until you obtain a smooth dough (about 5-7 minutes). Cover and let rise for about 60 minutes.
- For the stuffing: mix the basil and oil in a blender.
- Roll out the dough to form a rectangle on a floured surface. Then brush with the basil mixture.
- Now cut the dough into 12 parts of equal thickness (e.g. with a pizza roll), sprinkle with pieces of chopped mozzarella. Season with salt and pepper.
- Roll up the strips and place them in muffin moulds. Let rise for an additional 30 minutes.
- Now preheat the oven to 200 °C and bake the muffins for about 30 minutes.
