Ingredients
Rice
- 150 g sushi rice
- 5 tbsp sushi vinegar
- 1 tsp sugar
- 1 tsp salt
Toppings
- 150 g Tofu
- heat-resistant oil e.g. light sesame oil
- 1-2 tbsp soy sauce
- carrot salmon e.g. from Wild Foods
- 1/2 Avocado
- pickled ginger
- black sesame seeds
- 1/2 nori leaf

Rice
- Wash the sushi rice until the water is no longer cloudy, cook in the rice cooker according to the package instructions. Then leave to rest for 10 minutes.
- During this time, bring sushi vinegar with salt and sugar to the boil, reduce heat and simmer until sugar and salt have dissolved. Mix with the rice.
Toppings
- Dice the tofu and marinate with soy sauce. Heat the oil in a frying pan. Add the tofu and fry to taste.
- In the meantime, dice avocado, tear nori leaf into pieces by hand.
- Put the rice in two bowls. Arrange toppings as desired. Serve warm with soy sauce.
