These zucchini flower beignets can be eaten as a starter or as a side dish. They will certainly delight your guests and yourself as well!
Ingredients
- 4 courgette flowers
- 1 egg
- 60 g white flour (or Maïzena)
- 60 g rice flour
- 1 dl beer (or sparkling water)
- salt
- pepper
- Espelette pepper
- olive oil
- sunflower oil
- Greek yoghurt
- zest of one lemon
- zest of one lime
- fresh mint

Instructions
- Mix the two types of flour and the spices in a bowl.
- Add the egg and beer and whisk until you have a smooth, relatively thick mixture.
- Dip the washed courgette flowers into the batter and fry in a pan with sunflower oil.
- While the flowers are cooking, prepare the yoghurt sauce: mix the yoghurt with the lemon zest and chopped mint leaves, a little salt and pepper.
- Arrange the sauce and place the flowers on top.
