Fancy a glass noodle salad with tofu? Here you go – together with some facts about tofu: It contains between 12% and 19% protein, is therefore rich in protein and also contains B vitamins, iron, calcium, magnesium and phosphorus. The soy protein has a very high biological value and can almost compete with animal protein. Tofu contains about 124 kcal per 100 g.⠀
Ingredients
Tofu
- 300 g Tofu
- 4 tsp peanut oil
- 2 cloves garlic
- sesame
- (optional for seasoning: honey/maple syrup and fish sauce/soy sauce)
- salt
- pepper
Sauce
- 500 ml coconut milk
- 1 lime
- 1 tsp peanut oil

Instructions
- Prepare glass noodles (see package instructions, usually boil them for 5-10 minutes), quench and set aside.
- Cut vegetables into small pieces and put into a bowl
- For the sauce: warm coconut milk slightly, add oil and lime juice, place in a bowl and allow to cool
- Cut the tofu into cubes, mix with peanut oil and press the garlic cloves into it, season with salt and pepper. Fry in a pan for about 5 minutes until golden. Now add the sesame seeds and fry for another 1 minute. If you like, you can add some honey or fish sauce.
- Spread the ingredients on the plates and garnish with chopped chilli and peanuts.
