How about a delicious carrot soup with a special ingredient for a little exotic touch?
Originally from Japan, miso is a fermented soy paste that is used as a condiment to spice up dishes. Soy and fermentation make it an excellent nutritional cocktail with proteins, vitamins and minerals. Interested yet?
Ingredients
- 10-12 carrots
- 1 tsp Miso Paste
- 1 tsp peanut butter
- 1 tbsp sugar-free soy sauce
- 100-200 ml water (adjust according to desired texture)
- 1 bunch Parsley
- 1 pinch Gomashio

Instructions
- Peel then steam the carrots.
- Mix the carrots, miso paste, peanut butter, soy sauce and water.
- Pour the soup into a bowl.
- Wash and chop the parsley.
- Sprinkle the parsley and gomashio over the soup.
Recipe Notes
Tip: make sure the miso is not pasteurised, otherwise it loses all the benefits obtained by fermentation.
