It’s asparagus time and this popular vegetable is finding its way back to the local plates. This oven baked asparagus recipe is a perfect choice if you’re looking for something quick and easy.
Ingredients
- 1500 g green and white aspargus
- 200 g cherry tomatoes
- 150 g Mozzarella or vegan alternative
- 50 g Butter or vegan alternative
- salt
- pepper
- paprika powder
- 100 ml white wine
- 400 ml vegetable stock
- 1/2 tsp Parsley
- 1/2 tsp basil

- Preheat the oven to 200 °C.
- Prepare the asparagus and cut off the hard ends.
- Grease a rimmed baking tray with some butter.
- Place the asparagus and cherry tomatoes on the baking tray.
- Spread the rest of the butter in flakes over the vegetables.
- Cut the mozzarella into small pieces and spread them on the baking tray too.
- Season the mixture sufficiently with salt, pepper and paprika powder.
- Pour the white wine and the vegetable stock over it and place the baking tray into the preheated oven.
- Now bake everything together for approximately 25 minutes – turning the asparagus 1-2 times with a fork during the baking process.
- To finish, garnish the asparagus with basil and parsley.
