Are you taking part in Veganuary? Or do you eat vegan all year round anyway? Either way, this simple bowl with delicious ingredients can be served anytime!

- 1 sweet potato
- 1 courgette
- 1 red pepper
- 2 carrots
- 10-12 slices cucumber
- 50 g walnuts
- 2 tbsp pomegranate seeds
- 2 tbsp hummus
- 1 pinch salt
- 1 pinch pepper

- Peel the sweet potato and cut into small pieces. Next, fry with a little oil, then add enough water to the pan to cover the sweet potato pieces. Simmer until they are cooked.
- Wash the courgettes and the red peppers. Cut them into pieces and cook them.
- Add the carrots raw to the bowl. It is best to use a spiral slicer for this. However, you can also simply cut them into thin slices.
- Once the sweet potato pieces and vegetables are cooked, the bowl can be filled with all the ingredients. Finally, garnish with the cucumber slices, walnuts, pomegranate seeds and the hummus. Season to taste with salt and pepper.
Recipe Notes
A natural hummus is suitable for this dish. Alternatively, you can of course make the hummus yourself.
