- 1 kg coloured carrots
- 1 bundle Oregano
- coarse salt
- Ticino pepper
- olive oil with lemon
- apricot vinegar
- 1-2 burrata cheese

Instructions
- Preheat oven to 200°C.
- Cut the carrots in 2 or 4 lengthwise and put them in a dish and season them with salt, pepper and oregano.
- Add the olive oil and 4 tablespoons of apricot vinegar and mix well.
- Place in the oven for 35 minutes.
- Once the carrots are tender, remove from the oven, add the burrata on top of the carrots and enjoy.
Recipe Notes
Option: make a pesto with the carrot tops. This will add freshness to the dish!
